Chocolate Almond Cake

  • 3 eggs
  • One cup of shaved almonds
  • Half a cup of almond extract
  • Pinch of salt

For frosting

  • 2 ounces if chocolate
  • Rum one tablespoon
  • The remaining 6 tablespoon of butter
  • Almond shaving to garnish


  1. Preheat the oven. The oven must be warmed up until three hundred and fifty degrees. Butter the cake pan and then flour it.
  2. Melt the chocolate and rum together over a double boiler
  3. In another big bowl mix the sugar and butter until they are pale. Once they are pale yellow then add egg yolks. Blend well.
  4. In a separate bowl beat, the egg whites until its white and icing like.
  5. Mix the egg white, rum and chocolate mixture and the egg yolk mixture together. Use a wooden spatula to do that.
  6. While mixing gradually add the dry ingredients and mix with cut and fold technique
  7. Take the greased cake pan and transfer the mixture onto it. Put it inside the preheated oven twenty to twenty five minutes.  
  8. For frosting, mix the unsalted butter, icing sugar and bittersweet chocolate mixture together. Mix it generously until the icing is semi-solid in texture.
